Cook Assistant
Position: Cook Assistant
Reports To: Health/Nutrition/Safety Manager
Department: Head Start/Early Head Start/Child Care

Job Purpose:
Prepares and serves nutritious, well-balanced meals for Child Care participants at Mekesukey Mission (MM), Konawa (K), and Barking Waters (BW). Maintains cleanliness of food preparation areas, kitchen, utensils, and equipment. Function as grill cook and in cold food areas. Ensures all safety and food handling is following laws and regulations.
Job Duties:
• Prepares well-balanced, nutritious meals and snacks according to established policies, procedures, and nutritional guidelines; meals must be prepared according to the federal and state guidelines. Prepare and serve food items in accordance with recipes to include cooking and baking a variety of foods; review production sheets to determine requirements and quantity for daily food preparation Maintain and replenish food lines and breakfast carts; restock condiments and service ware; transport food orders and/or supplies to designated locations.
• Maintain and record food temperature to ensure quality and compliance with applicable guidelines; label and store food items and utilize leftovers in accordance to guidelines and procedures Maintains temperature controls for stored food and prepared hot food in accordance with federal and state recommended procedures.
• Practices good hygiene, including not wearing painted or ornamented fingernails, staying away from food when sick, and washing hands after personal breaks or handling meats, etc.
• Stores food and non-food products appropriately.
• Required to work in cold food production as scheduled.
• Coordinate cooking schedule to ensure production is completed in a timely manner; may work in collaboration with nutrition staff in the preparation of special diets.
• Conducts inventory of kitchen equipment, utensils, and linen supplies.
• Follows proper food handling procedures, including wearing required hair netting and serving gloves, and maintaining clean hands.
• Maintains a safe and healthy environment in accordance with established policies, procedures, and regulations in both the food preparation and dining areas.
• Washes and dries pots, pans, eating utensils, and other cooking equipment.
• Cleans and sanitizes kitchen and dining areas.
• Delivers meals to the classroom or serves meals.
• Maintains accurate records.
• Participates in all relevant training opportunities assigned, which are related to menu development, meal production, and meal service delivery.
• Observes, documents and refers in-house, all concerns related to the well-being of the child and family.
• Perform other duties as assigned.

Knowledge, Skills and Abilities:
• Knowledge of how to prepare well-balance and nutritious meals.
• Knowledge of menu planning and sanitation procedures.
• Knowledge of proper and safe food handling, storage, and disposal requirements.
• Skill in preparing food for young children.
• Skill in handling sharp knives, and other cutting utensils.
• Ability to communicate effectively in the English, both verbally and in writing.
• Ability to safely operate various cooking equipment and kitchen appliances.
• Ability to work extended hours and various work schedules.
• Ability to handle multiple tasks and meet deadlines.
• Ability to exercise independent judgment.
• Ability to establish and maintain professional relationships with individuals of varying social and cultural backgrounds and with co-workers at all levels.

Work Environment:
• Work is performed in a typical kitchen and classroom environment.
• Exposure to heat, cold, fumes, and steam.
• Noise level is usually moderate.
• Evening and/or weekend work may be required.

Physical Demands:
• Stands and walks for up to 8 hours per day.
• Talk, hear sit; use hands to handle objects, equipment, controls and reached with arms and hands.
• Extensive repetitive use of hands and arms to use kitchen equipment.
• Position requires frequent lifting of 50 lbs.

Minimum Qualifications/Requirements:
• High School Diploma/GED.
• Six (6) months to one (1) year of food preparation.
• Food Handler’s Certification or must obtain within ninety (90) days of employment.
• Valid Oklahoma driver’s license with ability to meet Seminole Nation liability insurance requirements and maintain eligibility for insurance.
• Must be able to pass background check, with no prior convictions and/or felonies.
• Must be able to comply with the Seminole Nation Drug Free Workplace policies.
